Fireweed honey is the champagne of honey.  It ranges in colour from almost water like clear to a purple hue. The darker coloured honey most often appears in the last half of the season from fireweed blossoms located on high mountain altitudes. The colour doesn't affect the flavour, which is always mild and smooth. It is delicious not only on its own, but also in delicate tea blends. Eat with fresh bannock or thick slices of fresh bread and butter for a special treat. It is by far the best honey you will ever taste!
